Raspberry Oat Breakfast Bars (Vegan & Gluten Free)

Take your oatmeal on the go with these easy to make healthy breakfast bars! Homemade raspberry chia jam is the key ingredients to making this recipe irresistible. Refined sugar free, vegan and gluten free!

Ingredients for 9 Bars
Crumb:
1 Cup Oat Flour
1/2 Cup Almond Flour
1 Cup Rolled Oats
1/3 Cup Maple Syrup or agave
1/3 Cup Coconut Oil Melted
1/4 tsp Salt
1 tsp Vanilla Extract
1 tsp Almond Extract
*Optional:
1 Tbsp Hemp Seeds
1 Tbsp Pumpkin Seeds
1 Tbsp Sun flower Seeds
2 Tbsp Vegan Butter Melted
Raspberry Chia Jam:
2 Cups Raspberries
3 Tbsp Maple Syrup or agave
2 Tbsp Lemon Juice
2 Tbsp Chia Seeds
1/2 tsp Lemon Zest
Directions:
Preheat oven to 350°F
Combine oat flour, almond flour, oats, maple syrup, coconut oil, salt, vanilla & almond extract in a medium sized bowl. Mix until well incorporated.
Evenly spread 2/3 of crumb mixture and press into bottom of 8x8 parchment lined pan to form the bottom crust. Chill while raspberry chia jam is being prepared.
In a small pot combine all raspberry chia jam ingredients and bring to a simmer on medium heat. Using a fork or masher, mash the raspberries down to desired consistency.
Allow mixture to bubble for 2 minutes. It's ok if the mixture hasn't thickened, it will in the oven later.
Pour Jam onto prepared crust. Using a spoon or spatula evenly distribute.
To the bowl of the remaining crumble add the optional seeds and vegan butter. Stir to combine.
Sprinkle the crumble over the top of the jam.
Place pan in the oven and cook for 35-40 minutes or until crumble is golden brown on top.
Let cool & Cut into 9 bar.

Important to note:
You can add nuts, seeds, coconut or any other toppings you like.
If not eating within 3 days, freeze to prevent bars from spoiling.
Top with plant based yogurt, agave and berries for a complete breakfast!
